Weekly Meal Plan

My Messy Kitchen!

Since getting married three years ago, I've tried a few times to have a hot dinner ready for my husband when he came home.  Then I got real and decided that he was lucky if I made him a sandwich.  I work the same long hours as he does- how am I supposed to cook dinner before he gets home???

I've tried freezer cooking, with mixed results.  Most of the meals aren't to our liking - too many casseroles and ground meat dishes. Plus I have to remember to defrost things ahead of time, and I never do.  Crock pot cooking is helpful now and again, but each recipe I find calls for so many cans of soup... I almost never want to eat anything that comes out of that crockpot.

So here I am, with a new approach: Weekly Meal Planning.  This method asks me to write down all of the dinners that I plan to make for the week on Sunday.  This way I can grocery shop and have everything on hand that I'll need.  I started this week, and so far so good.  Here's what we're eating:

Sunday: Cornflake crusted Tillapia with rice pilaf and green beans
Monday: Pasta with veggies from the garden and garlic bread
Tuesday (today): Burgers with Salad (more garden goodies!) and baked beans
Wednesday: Grilled chicken with salad and any leftovers.
Thursday: Zucchini Soup with garlic bread
Friday: Date Night!  (I'm really excited, it's been forever!)

I only had to buy a couple of things from the store, since most of this is already in my freezer/garden.

Shopping List:
Bread, Lettuce, Sausage (for the soup), milk, eggs, and some fruits for snacking. 
I really think that this is going to help me be more organized in the evenings, and eat healthier, since I won't be tempted to stop at KFC on the way home from work. Looking at that grocery list, it might even help me save money too!

    And the crock pot..ARG! Cans of cream of YUCK! Slowly some recipes are coming out that don't call for any processed food. They are hard to find but I get excited when I find one!

  6. Hi Megs! I'd love to hear your can-free crock pot recipes... I have a few that I've made... pulled pork comes to mind right now, but nothing that has been really tasty.
